Someone asked for fruit soup recipes. This one, a delicious
and refreshing cold soup (or summer drink) is a must for all
strawberry lovers. It is from my high school English teacher.
Swiss Strawberry Soup
Ingredients:
2 pints fresh strawberries
- 1 cup orange juice
Set 1: -| 1 1/2 t. quick cooking tapioca
| 1/8 t. cinnamon
- 1/8 t. allspice
- 1 cup buttermilk
Set 2: -| 1/2 cup sugar
| 1 T. lemon juice
|_ 1 t. grated orange or lemon rind
Wash and hull berries. Puree. Add set 1 and stir.
Pour into casserole dish and microwave 5-6 min. Stir in set 2.
Chill, covered.
Variation: For a great summer drink, do as above, then liquefy
in blender.
